Broccoli Candy Recipe
 

One of my favorite, all purpose, accessible recipes. If you say you don’t like broccoli, it’s because you haven’t tried this yet.

Preheat the oven to 425

One 25 oz bag frozen broccoli florets

Several glugs of olive oil - enough to coat but not drown

A few pinches of salt

A few grinds or pinches of black pepper

1/2 cup parmesan cheese


Pour the frozen florets onto a cookie sheet. Drizzle with olive oil, then salt and pepper. Use your hands to toss to combine. Place in the oven for about 25 minutes, or until browned in places, stirring midway through. They will initially steam and get mushy. You want to push through this stage until they’re reduced in volume and beginning to get browned becauswe this equals concentration of flavor and sweetening of the natural sugars.

When you’re happy with the color, sprinkle the parmesan on top and return to the oven for about 5 minutes, ur until melted.

Stand back and watch it fly off the cookie sheet.
